Pierre Troisgros was a French chef and restaurateur best known for his eatery Frères Troisgros. He lived from September 3, 1928, to September 23, 2020. The Hôtel Moderne, which Pierre Troisgros and his brother continued, was where they created their signature dish, “Escalope de saumon à l’oseille Troisgros,” or salmon with sorrel sauce. He had established a record by never losing any of his three Michelin stars after receiving them the first time. The Telegraph’s Stephen Harris called him “the father of nouvelle cuisine.”
