Pierre Troisgros was a French chef and restaurateur best known for his eatery Frères Troisgros. He lived from September 3, 1928, to September 23, 2020. The HĂ´tel Moderne, which Pierre Troisgros and his brother continued, was where they created their signature dish, “Escalope de saumon Ă l’oseille Troisgros,” or salmon with sorrel sauce. He had established a record by never losing any of his three Michelin stars after receiving them the first time. The Telegraph’s Stephen Harris called him “the father of nouvelle cuisine.”
